We recently re-discovered this story, produced a few years back.

Staying in Louisville, Kentucky at the 21c Museum Hotel, we were happy to share a delicious meal at their farm-to-table restaurant. The name of the restaurant is Proof and at the time of this video the Executive Chef was Michael Paley. (He has since moved on to helming kitchens in Austin, Texas.)

We had a nice conversation and he invited us back. The next time we were at the hotel, we brought the tools of our trade.

The cameras were set, the lights turned on, Chef gave us his time and we listened to his story.
